How can I keep muffins the freshest for Friday/Saturday if I'm baking them now? - lemon baking chips

I make homemade rolls tomorrow, but I would like to bring to New York with my Friday afternoon for a friend that I visit. Should I freeze cakes? Refrigerator? Or just go for a new Thursday night? I am: Molasses-Bran, Lemon and blueberry, chocolate and white chocolate chips.

Prepare the dough the night before, then make enough time in the morning to cook. If you do this can not, do not let them sit until BerCom hard as a brick.
